    Our agar-agar and all of our carrageenan products have the advantageous characteristic of gelatin. Gelatin is originally extracted from boiled bones, skins, hooves, and tendons of such animals as cows and pigs. So vegetarians and members of certain religions object to the use of animal-derived gelatin. Many vegetarians rely upon agar-agar & carrageenan as substitutes. Like ordinary gelatin, both agar-agar & carrageenan are odorless, colorless, flavorless, and become gelatinous when they are dissolved in water, heated and then cooled. Both products gel more firmly than gelatin. They set and melt at higher temperatures — they even set at room temperature.
